Queso

            FauxDoba Queso

            2 cups shredded pepper jack cheese
            2 cups shredded American cheese
            2 cups shredded cheddar
            1 can Rotel, drained (save liquid to thin queso, as necessary)
            2 cups heavy cream
            2 cloves minced garlic
            1 tsp ground cumin
            1/2 tsp. Chipotle powder

            Toss it all into a crockpot and cook on low for 2 hours, stirring occasionally. You can also bake this in a casserole dish at 350 until melted and bubbly.


(If you like a whiter queso, just use white american and white cheddar. You can get white american at the deli counter.)
