One of our weekend pleasures are big breakfasts. A rare pleasure is pancakes. About year ago we began making them from scratch. We had run out of pancake mix and realized that we had all the ingredients on hand to make them. This morning, I thought that maybe we could branch out a bit and suggested sour cream pancakes. Searched for and found a recipe online. All I can say is, "YUM!"

2 tbsp. butter
1 c. flour
2 tsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs, slightly beaten
1 c. sour cream
1/4 c. milk
Melt butter and cool. Beat together eggs and sour cream until well blended. Add cooled butter and milk. Sift dry ingredients together. Make well in dry ingredients and stir in liquid mixture. Stir until well blended. Makes about 1 dozen 3 inch pancakes.
