It's been many years since my favorite Mexican Restaurant closed. I used to enjoy their pollo fundido, a deep-fried delicious chicken concoction. Craving it the other night, I googled recipes and found many on the Internet. Decided to give one a try, only to find that I did not have all the necessary items on hand. Well, if you know me, you know that I love to create my own recipes, so gave it a try. Here is my work in progress....
POLLO FUNDIDO
3 chicken breasts
1 TBSP each of chili powder, cumin, and garlic powder.
Place the chicken in a sauté pan and put on medium heat. Place seasoning on top of chicken. Add one can of diced green chilis, two cups of water, and one cup of picante sauce or salsa of your favorite level of heat.
Let them stew up a while and then shred the chicken with two forks. Let them cook fully so that the chicken absorbs all of the flavors.
Now, get out a package of tortillas. Place some of the chicken in each tortilla and fold up into a square by folding each of the sides over and then the ends. Place folded side down in baking pan.
Heat oven to 350.
While oven is heating, mix up a package of cream cheese with about 1/2 cup of sour cream. If you have jalapenos, add some to the mixture. I did not have jalapenos, so used chipotle powder to taste. Place about a tablespoon's full or so on top of each folded packet. Place a slice of cheddar cheese on top of each.
Bake in the heated oven until cheese starts to get a bit bubbly on top.
Makes about ten. Enjoy!
