Always trying to find new ways to offer chicken, this one used Cajun seasoning, Tony Creole's was the one that I used, but next time will probably use Penzey's....
Place four chicken breasts in deep sauté pan. Add two cans of stewed tomatoes, four slices of bacon, cooked and crumbled, and Cajun seasoning to taste. Cook the chicken thoroughly and pull from pan to shred. While the chicken is out, use an immersion blender to break up the tomatoes and bacon. Place the shredded chicken back in to soak upmthe flavor.
Serve over rice.
