Canteen

A place that we enjoy for a Canteen is Canteen in the Alley, in Ottumwa, Iowa.   This restaurant has been in the same place since 1927.  When the city built a parking garage, it built it right over the top of it!  Seats 18 and has a very limited menu.  A Canteen is a loos-meat sandwich.  Some call the Taverns, some call then Maid-Rights. The Lanford Lunchbox in the Roseanne and Connors TV series was based on this restaurant.  Great pies and milkshakes, too!

The restaurant is a bit of a drive, so when I am craving one of their sandwiches, I have to plan for the long drive.  I googled many recipes online and could not find exactly what I wanted, so I set o=about combining some of the ideas in those recipes to come up with my own.

Well, this was a fun one to create!

14 oz browned hamburger or 1 pound raw, brown it well.
1 tsp Onion powder
1 tsp Garlic powder
1/4 tsp Celery seed
2 Tablespoons Worchestershire sauce
1 Tablespoon prepared mustard
1 Herb-Ox low sodium beef bullion cube, disolved in one cup hot water
Salt and fresh ground pepper to taste

Defrost or cook hamburger in pan with seasonings until warmed through.  Add broth, let simmer so that the liquid cooks down a bit, but is still juicy. Serve on buns.
