Grandma Mary Etlicher's Chicken and Dressing Casserole

1 stewing chicken
1/2 c. Chicken fat
4 c chicken broth
1/2 cup flour

Savory Dressing
2 c onion, finely chopped
1 T salt
1-1/2 c. Celery, diced ( or more)
1/3 c. Chicken fat or broth
1/4 tsp. Pepper
2 tsp. Poultry seasoning
1 lg size day old loaf cubed white bread, 24 to 32 oz.

Cook chicken, remove meat from bones, cut in bite sized pieces. Melt 1/2 cup chicken fat in saucepan. Add flour. Gradually add chicken broth and cook until thickened. Add chicken and thickening broth to dressing. Put in greased baking pan, 10 x 14 inches. Cover. Bake at 350 for 50 minutes. Uncover, bake 10 minutes longer or until lightly browned.

Savory dressing
Melt fat or shortening in skillet. Add onion and celery. Cook until tender. Combine with bread and seasonings.

Butter can be used instead of fat. Also adding two small cans of cream of celery soup.
